Wow! Ive made a few of the recipies and enjoyed them a lot, but the one that is making me post this now is the mozzarella! Omgosh!!! I dont think anyone would ever think this isnt dairy mozzarella. Id bet money you could fool all cheese snobs. And its sooooo fresh tasting so better than anything ive had, even in ny, spain and italy (before i turned vegan). I made my own vegan yougurt where it called for the yougurt. Culturing stuff might sound complicated but its soooo easy. Trust me. All it means is you have to wait a bit sometimes. The non culture recipies ive seen elsewhere use many more ingredients in attempt to simulate the taste of culturing. So they are actually harder to make and not nearly as good at all . Thank you for these recipies! I already started to make a bunch more yougurt so i can make more mozzarella as what i made wont last long.
