    I LOVE this book! I just gradually transitioned to a vegan diet (took me about 6 months to get there), and at age 30, I thought, "how in the heck am I going to get used to cooking with staples I never even knew existed???" Well, this book is a great book for beginners, or just non-creative cookers! I love that this book has delicious spins on recipes that my former self used to cook (love the smokey black bean enchiladas & pad thai). The only negative about this book is that it's not really necessary "healthy" because a lot of the recipes are still using processed junk (cheese, fake meat, etc). However, I do love that this recipe has really introduced me how to cook vegan and it's made the transition so much easier! And I've seen omnivores in action enjoying these recipes! The baked goods are amazing!
